CUKE – TOM – AVO Salad

Cuke Tom AVO Salad

Servings: 4 to 6 people

 

1 lb. Roma tomato’s (diced)
1 English cucumber (diced)
1/2 med. red onion (sliced or diced)
2 Avocado’s (diced)
2 tbsp. extra virgin olive oil
1/4 cup finely chopped cilantro
Juice of 1 lemon (about 2 tbsp.)
1 tsp. sea salt
1/8th tsp. black pepper

 

Place tomato, cucumber, red onion, cilantro, and avocado into a large bowl. Drizzle with olive oil and lemon juice. Toss items within bowl gently. Just before serving toss with salt and pepper.
